I was so excited to use this book with my students as a text book during my summer program. There are so many mistakes and inconsistencies that my chef instuctors and I starting using our own recipes instead of those in the book.

The pictures are beautiful but I wouldn't trust a single recipe. Great book, very informative - slightly confusing. I would describe myself as an avid cooking dilettante.
